A few weeks ago, my sister made these strawberry pancakes and invited me over and OMG they were always on my mind. In fact, I wrote a poem for them.

Maybe I didn’t treat you 
Quite as good as I should have, pancakes,
Maybe I didn’t love you 
Quite as often as I could have, pancakes
Little things I should have said and done
I just never took the time for you pancakes

Do I deserve a Pulitzer, or what? Okay, to be fair, I might have used some Elvis lyrics in here, but they do reflect my feelings toward those pancakes and I also changed them a lot by adding the word “pancakes” and “fluffy” a few times, so technically it’s not plagiarism.

There’s a wise Chinese saying: “If you can’t stop thinking about something, then just act on it. Especially if it’s pancakes.”

Maybe it wasn’t Chinese, I’m not good at geography. I hardly passed and I cheated all the time. But you know what I was good at in school? Not being hungry. That’s a skill for life and it makes you super creative, cool and beautiful.

Speaking of super creative: I wanted to make my sister’s strawberry pancakes every single morning, but all I had was 2 bags of cherries at home. So I decided, to break all the rules and I made my batch of cherry pancakes.

You know what? I think this is the first cherry recipe on my blog. And I actually adore these fruits.

I just never eat them with something else, because they’ll get infected. Pretty much like watermelon, they’re perfect on their very own. They have a perfectly round shape, great color, taste and smooth skin. Also, they’re super healthy as they contain a great number of polyphenols with antioxidant, anti-inflammatory and anti-cancer properties, and I’m not just making this up – source.

The only flaw cherries have is their pits. Unlike strawberries or raspberries, which are also red and beautiful, you can’t just stuff your mouth with a bunch of cherries as if they’re popcorn. You’d break a tooth. If you don’t have teeth, you might choke. Bottom line: Cherries are delicious but dangerous. Handle with care, love and a lot of fear.

How To Make Cherry Pancakes

If you’ve been following this blog for a while, you know I usually make my pancakes with ground oats and they turn out really delicious and I’m very humble. I thought my recipe cannot be beaten. It’s untouchable. It’s indestructible. It’s mine and I’m probably a narcissist like everyone else.

Well, the recipe I’m sharing today is kinda different and I’m sorta liking it a little bit more right now. Today’s pancake recipe uses a little bit of Greek yogurt, which makes the oatmeal pancakes waaayyyy fluffier and me even happier.

Now on to the process of making these cherry pancakes.

  1. Pitting the cherries. So the first thing you need to do is pit some fresh cherries. At first, I did this by cutting the cherries and it took me 3 hours and the cherries were crying. But then, I researched and found out the best way to pit cherries without hurting them, is to quickly run a straw through the cherry while twisting. It did take me a minute or two to pit 10-15 cherries, but hey, that’s all you need for these pancakes. Then slice them in 1/2 and move on. And calm down, once the pit is out, cherries don’t feel a thing.
  2. Making the batter. To make the batter you’ve got 2 options. You can either put all ingredients in a food processor or blend them with a hand blender. Another option is to grind the oats or use oats ground by Unknown, incorporate a small arm workout and whisk the ingredients together.
  3. Making the pancakes. Once you’ve got the batter ready and the cherries pitted and halved, time to heat a skillet and start making the pancakes. Form small pancakes, to be on the safe side when flipping. After you’ve formed enough pancakes to fill the pan, cover the pancakes with the cherries. Once you see the pancakes start to get ready on one side flip and cook until golden-brown on the cherry side too.
  4. Eat. Now take them out of the pan, put them on a plate and enjoy!
  5. Toppings? You can add any toppings you like, but I didn’t feel these needed a topping at all, so I ate them like this as if I have no self-respect.

Breakfast On The Go?

If you’re like me and prefer to eat over the sink or on the go, I’ve got good news for you: These cherry pancakes can definitely survive a short trip.

But careful! Oatmeal pancakes are notorious for escaping out of bags. You can’t just throw them in the bag and run. That’s silly and irresponsible – they’ll jump out like it’s nothing.

This is what you HAVE to do:

  • Let them cool off. This makes the pancakes feel safe as if they’re not going to be eaten by a monster (us).
  • When they least expect it: quickly put them in an airtight container or in a Ziploc bag and THEN also lock them in your bag. Tip: If it’s hard to catch the pancakes, distract them by whistling a song like “If you’re happy and you know it” – they can’t help but stamp their feet to it.

Now that you’ve locked those suckers two times – this will assure there are no pancakes on the run.

Healthy cherry pancakes made with oats, Greek yogurt and vanilla! These fluffy pancakes are a delicious, nourishing and easy breakfast you can also have on the go!

Ingredients

  • 1 egg
  • 1 1/2 tbsp yogurt
  • 1/2 cup ground oats
  • 1 Tbsp honey
  • 1/2 tsp baking soda
  • 1/2 tsp ground vanilla
  • 1/3 cup cherries, pitted, halved
  • 1 Tbsp coconut oil (for frying)

Instructions

  1. Whisk the egg, yogurt and honey until well combined.
  2. Mix in the ground oats.
  3. Add the baking soda and the vanilla. Mix it all together until you have a thick, yet fluid batter.
  4. Alternatively, you can simply put everything in a food processor or use a hand blender to make the batter.
  5. Heat coconut oil in a non-stick pan at medium-high heat. Reduce the heat to medium and pour the mixture forming small pancakes.
  6. While cooking, top each pancake with the cherries.
  7. When the pancake edges are done, flip. Cook until golden brown then quickly transfer to a plate.
  8. Enjoy like this or top with your favorite toppings!

While I’m loving the 7-Day Clean Eating Challenge and eating more hydrating foods, I seriously can’t wait for next week to make these pancakes again. Hopefully, cherries are still in.
